Instructions

  1. Prepare the Zucchini: Finely grate the zucchini into a large mixing bowl. Sprinkle half of the salt (1/2 tablespoon) over the grated zucchini, then let it sit for 10 minutes. This process helps to draw out excess moisture, which is key to getting crispy fritters.
  2. Remove Excess Moisture: After the resting period, use your hands or wrap the zucchini in a cheesecloth and squeeze firmly to remove all the excess water. This step ensures the fritters will crisp up nicely during cooking.
  3. Mix the Batter: In a large bowl, combine the drained zucchini with the scallions, beaten eggs, almond flour, baking powder, the remaining salt, and freshly grated parmesan cheese. Stir well until the mixture is evenly combined.
  4. Fry the Fritters: Heat 2 tablespoons of oil in a non-stick skillet over medium heat. When the oil is hot, scoop spoonfuls of the zucchini batter into the skillet, flattening each into a disc shape with the back of the spoon.
