Ingredients
Sweet Potatoes
- 4 medium sweet potatoes, peeled and cut into thick rounds
- 2 tablespoons olive oil
- 1 tablespoon honey
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Garlic Yogurt Dipping Sauce
- 1/2 cup plain yogurt
- 1 teaspoon garlic powder (or 1 clove fresh garlic, minced)
- 1 tablespoon lemon juice
- Salt to taste
Instructions
- Preheat and prepare: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
- Arrange sweet potatoes: Place the peeled and sliced sweet potato rounds evenly on the baking sheet. Drizzle olive oil over them and season with salt and pepper to taste.
- Roast until tender: Roast the sweet potatoes in the preheated oven for about 25 minutes, or until they are tender when pierced with a fork.
- Smash the sweet potatoes: Carefully remove the baking sheet and gently smash each sweet potato slice using a fork or the bottom of a glass until flattened but still intact.
- Drizzle honey and crisp: Drizzle honey evenly over the smashed sweet potatoes. Return the baking sheet to the oven and bake for an additional 15-20 minutes, or until the potatoes are crispy and golden on the edges.
- Prepare the dipping sauce: While the sweet potatoes finish baking, mix plain yogurt, garlic powder (or minced fresh garlic), lemon juice, and salt in a small bowl to create the garlic yogurt dipping sauce.
- Serve: Once the sweet potatoes are crispy, remove them from the oven, garnish with fresh parsley if desired, and serve warm alongside the garlic yogurt dipping sauce.
Notes
- You can use fresh minced garlic instead of garlic powder for a stronger garlic flavor in the dipping sauce.
- Make sure not to smash the sweet potatoes too thin to maintain a soft center.
- For extra crispiness, broil the smashed potatoes for 1-2 minutes at the end, watching closely to prevent burning.
- Sweet potatoes of similar size ensure even cooking.
- This dish can be served as a side or appetizer.
