Ingredients
Salmon:
- 4 salmon fillets (about 6 oz each)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 teaspoon grated fresh ginger
- 1 garlic clove, minced
- 1 tablespoon cornstarch
Other Ingredients:
- 2 tablespoons vegetable oil
- 2 cups cooked jasmine or brown rice
- 1 avocado, sliced
- 1 cup shredded carrots
- 1 cup sliced cucumber
- 1/4 cup sliced green onions
- 1 tablespoon sesame seeds
Instructions
- Mix Soy Sauce Mixture: In a small bowl, whisk together soy sauce, sesame oil, honey, rice vinegar, garlic, and ginger.
- Prepare Salmon: Pat salmon fillets dry and rub with cornstarch. Sear in vegetable oil until crispy.
- Assemble Bowls: Divide rice into bowls, top with salmon, avocado, carrots, cucumber, green onions, and sesame seeds.
Notes
- For added crunch, serve with roasted seaweed snacks or sriracha mayo.
- You can substitute rice with quinoa or cauliflower rice for a lighter option.
