Ingredients
- 2 medium zucchini, sliced into sticks
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup freshly grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- Cooking spray or olive oil, for coating
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly coat with cooking spray.
- Slice zucchini into uniform sticks and pat them dry thoroughly with paper towels.
- Set up a breading station with three bowls: one with flour seasoned with salt and pepper, one with beaten eggs, and one with a mix of panko, Parmesan, garlic powder, Italian seasoning, and a pinch of salt.
- Dredge each zucchini stick in the flour, then dip in the egg, and coat well in the breadcrumb mixture. Press to adhere.
- Place breaded zucchini on the baking sheet in a single layer. Spray tops lightly with cooking spray.
- Bake for 20–25 minutes, flipping halfway through, until golden brown and crisp. Broil for 1–2 minutes at the end for extra crunch if desired.
- Serve immediately with dipping sauces of choice.
