Description

Golden, crunchy on the outside and tender on the inside, these baked zucchini fries are packed with garlic and parmesan flavor—perfect as a healthier, irresistible side or snack.


Ingredients

  • 2 medium zucchini, sliced into sticks
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Cooking spray or olive oil, for coating


Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly coat with cooking spray.
  2. Slice zucchini into uniform sticks and pat them dry thoroughly with paper towels.
  3. Set up a breading station with three bowls: one with flour seasoned with salt and pepper, one with beaten eggs, and one with a mix of panko, Parmesan, garlic powder, Italian seasoning, and a pinch of salt.
  4. Dredge each zucchini stick in the flour, then dip in the egg, and coat well in the breadcrumb mixture. Press to adhere.
  5. Place breaded zucchini on the baking sheet in a single layer. Spray tops lightly with cooking spray.
  6. Bake for 20–25 minutes, flipping halfway through, until golden brown and crisp. Broil for 1–2 minutes at the end for extra crunch if desired.
