Ingredients
Chicken:
4 boneless, skinless chicken breasts;
Coating:
½ cup mayonnaise; 1 tablespoon Dijon mustard; 1 teaspoon garlic powder; 1 teaspoon onion powder; ½ teaspoon paprika; ½ teaspoon salt; ¼ teaspoon black pepper;
Cheese Topping:
1 cup shredded provolone or mozzarella cheese; ½ cup grated Parmesan cheese; ½ cup panko breadcrumbs; 2 tablespoons melted butter; chopped parsley for garnish
Instructions
- Preheat the oven: Preheat the oven to 400°F and lightly grease a baking dish.
- Prepare the chicken: Pound the chicken breasts to an even thickness.
- Make the coating: In a small bowl, mix mayonnaise, Dijon mustard, garlic powder, onion powder, paprika, salt, and pepper. Spread over each chicken breast.
- Prepare the topping: Combine shredded cheese, Parmesan, panko breadcrumbs, and melted butter. Sprinkle over chicken.
- Bake: Bake for 25 to 30 minutes until chicken is cooked through and topping is golden brown.
- Rest and serve: Let rest for 5 minutes, garnish with parsley, and serve.
