Ingredients
For the Quesadillas:
- 4 large flour tortillas
- 2 cups shredded cooked chicken or black beans
- 1 1/2 cups shredded cheddar or Mexican blend cheese
- 1/2 cup salsa or pico de gallo
- 1/4 cup chopped green onions
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and black pepper to taste
- Olive oil or cooking spray for brushing
Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C) and prepare a baking sheet with parchment paper or light greasing.
- Mix the filling: In a bowl, combine chicken (or beans), cheese, salsa, green onions, cumin, chili powder, salt, and pepper.
- Fill the tortillas: Spoon the filling onto one half of each tortilla, fold over, and press gently to seal.
