Description

These Crispy Oven-Baked Quesadillas are a delicious twist on the classic dish, with a golden brown, crispy exterior and a flavorful, cheesy filling. Perfect for a quick and easy dinner that the whole family will love.

Ingredients

For the Quesadillas:

  • 4 large flour tortillas
  • 2 cups shredded cooked chicken or black beans
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 1/2 cup salsa or pico de gallo
  • 1/4 cup chopped green onions
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste
  • Olive oil or cooking spray for brushing

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C) and prepare a baking sheet with parchment paper or light greasing.
  2. Mix the filling: In a bowl, combine chicken (or beans), cheese, salsa, green onions, cumin, chili powder, salt, and pepper.
  3. Fill the tortillas: Spoon the filling onto one half of each tortilla, fold over, and press gently to seal.
  4. Bake: Place quesadillas on the baking sheet, brush tops with oil or cooking spray, bake for 10–12 minutes, flipping halfway through.
  5. Serve: Let cool slightly before slicing and serving.

Notes

  • Customize with different fillings like veggies or beef.
  • For extra crispness, bake directly on the oven rack for the last 2 minutes.
