  • 1 pound fresh okra, trimmed and halved lengthwise
  • 1/2 cup cornmeal
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 large egg
  • 2 tablespoons buttermilk or milk
  • Vegetable oil, for frying


Instructions

  1. Prepare the Coating Mixtures: In a shallow bowl, whisk together the egg and buttermilk (or milk) until smooth. In another separate bowl, combine the cornmeal, all-purpose flour, garlic powder, smoked paprika, salt, black pepper, and cayenne pepper (if using). Mix well to evenly distribute the spices and seasonings.
  2. Coat the Okra: Dip each okra half first into the egg and buttermilk mixture, allowing any excess to drip off. Then dredge the okra in the seasoned cornmeal mixture, pressing gently to ensure the coating adheres well on all sides.
  3. Heat the Oil: Pour about 1 inch of vegetable oil into a large skillet and heat over medium-high heat until it reaches approximately 350°F (175°C). Use a thermometer for accuracy to ensure proper frying temperature.
  4. Fry the Okra: Fry the coated okra halves in batches, taking care not to overcrowd the pan. Cook each batch for 2 to 3 minutes per side, or until the okra fries turn golden brown and crispy.
  5. Drain and Serve: Use a slotted spoon to transfer the fried okra onto a plate lined with paper towels to drain excess oil. Sprinkle with additional salt if desired and serve immediately while hot and crispy.
