Description

These Crispy Jalapeño Popper Beef Taquitos combine spicy pickled jalapeños, creamy cheeses, and savory ground beef rolled in tortillas and baked to golden perfection. Filling

  • 1/2 pound ground beef
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped pickled jalapeños
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

  • 8 small flour or corn tortillas
  • Oil spray or light vegetable oil for brushing


Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Cook Ground Beef: In a skillet over medium heat, cook the ground beef until fully browned, breaking it up with a spoon as it cooks to ensure it cooks evenly. Once browned, drain off any excess grease to keep the taquitos from becoming too oily.

  5. Assemble Taquitos: Spoon 2 to 3 tablespoons of the filling onto each tortilla and roll tightly into a taquito shape. Place each rolled taquito seam-side down onto the prepared baking sheet to prevent them from unrolling during baking.
