Description

Crispy hashbrown and sausage bites are the perfect make-ahead breakfast or appetizer—golden on the outside, tender on the inside, and packed with savory flavor. Made with shredded potatoes, sausage, cheese, and simple seasonings, these bite-sized treats are great for brunch, meal prep, or party snacks.

Ingredients

Main Ingredients

  • 2 cups frozen shredded hashbrowns (thawed and patted dry)
  • 1/2 pound breakfast sausage (cooked and crumbled)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs

Seasonings

  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Optional Garnish

  • Chopped chives or parsley

Instructions

  1. Preheat and prepare: Preheat the oven to 400°F (200°C) and lightly grease a mini muffin tin to prevent sticking.
  2. Mix ingredients: In a large bowl, thoroughly combine the thawed and dried hashbrowns, cooked and crumbled breakfast sausage, shredded cheddar cheese, grated Parmesan cheese, eggs, garlic powder, onion powder, salt, and black pepper until evenly mixed.
  3. Assemble bites: Spoon the mixture evenly into each cup of the prepared mini muffin tin, pressing down slightly to compact the ingredients and help form the bites.
  4. Bake: Place the muffin tin in the oven and bake for 20 to 25 minutes, or until the tops turn golden brown and the edges become crispy.
  5. Cool and release: Remove from the oven and let the bites cool in the pan for 5 minutes to set. Use a small knife to gently loosen each bite from the tin.
  6. Garnish and serve: Optionally, sprinkle chopped chives or parsley on top for a fresh garnish, then serve warm as a delicious breakfast or appetizer.

Notes

  • For a spicy twist, substitute hot sausage or add a pinch of red pepper flakes to the mixture.
  • These bites can be made ahead and stored in the refrigerator for up to 4 days or frozen for up to 1 month.
  • Reheat in the oven or air fryer to maintain the crisp texture.
