  • 1 pound white button or cremini mushrooms, cleaned and stems trimmed

  • ¾ cup cold sparkling water, plus more if needed

Instructions

  1. Prepare the Batter: In a large bowl, whisk together the all-purpose flour, cornstarch, garlic powder, paprika, salt, and black pepper until well combined. Gradually add the cold sparkling water, whisking slowly until a thick and smooth batter forms. If the batter is too thick, add a splash more sparkling water to reach the desired consistency.
  2. Heat the Oil: Pour about 2 inches of vegetable oil into a deep skillet or pot and heat it over medium-high heat until it reaches 350°F (175°C), using a thermometer for accuracy.
  3. Batter and Fry Mushrooms: Working in small batches, dip each cleaned mushroom into the batter, allowing the excess to drip off. Carefully lower them into the hot oil, frying for 3 to 4 minutes or until they turn golden brown and crispy. Turn them occasionally to ensure even cooking.
  4. Drain Excess Oil: Using a slotted spoon, remove the fried mushrooms from the oil and transfer them to a paper towel-lined plate to drain off excess oil.
