Description

These Crispy Fried Jalapeño Popper Stuffed Onion Rings are a delicious twist on the classic appetizer, featuring sweet onion rings filled with a creamy, spicy jalapeño popper cheese blend, then coated in seasoned breadcrumbs and deep-fried to golden perfection. Perfect as a party snack or indulgent side dish.

Ingredients

Onion Rings

  • 2 large yellow or sweet onions

Filling

  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 12 jalapeños, finely diced (seeded for milder heat)
  • ¼ cup bacon bits (optional)
  • ½ tsp garlic powder (optional)
  • 2 tbsp chopped scallions (optional)

Breading

  • ½ cup all-purpose flour
  • 2 eggs, beaten
  • 1½ cups seasoned breadcrumbs or panko

Frying

  • Oil for frying (vegetable or canola), enough for deep frying at 350°F (175°C)

Instructions

  1. Slice and separate onion rings: Slice the onions into ½-inch thick rings and carefully separate them into individual rings.
  2. Prepare filling: In a medium bowl, combine the softened cream cheese, shredded sharp cheddar, finely diced jalapeños, and if using, add bacon bits, garlic powder, and chopped scallions. Mix well and chill the filling in the refrigerator to firm it up slightly.
  3. Stuff rings: Generously spoon or pipe the chilled cheese and jalapeño mixture into the separated onion rings, filling the center fully.
  4. Freeze stuffed rings: Arrange the stuffed onion rings on a parchment-lined baking sheet and freeze them for 20 to 30 minutes, helping the filling set for easier breading.
  5. Bread the rings: Dredge each stuffed ring first in all-purpose flour, then dip into the beaten eggs, and finally coat thoroughly with seasoned breadcrumbs or panko for a crispy crust.
  6. Fry the onion rings: Heat oil in a deep fryer or large heavy-bottomed pot to 350°F (175°C). Fry the rings in small batches for 2–3 minutes on each side, or until golden brown and crispy.
  7. Drain and serve: Remove the fried onion rings using a slotted spoon, drain excess oil on paper towels, and serve immediately while hot, paired with your favorite dipping sauces.

Notes

  • For less heat, remove seeds from jalapeños before dicing.
  • Freezing the stuffed rings before breading helps keep the filling intact during frying.
  • You can substitute bacon bits with cooked and crumbled bacon for added flavor.
  • Serve with ranch dressing, spicy mayo, or ketchup for dipping.
  • Ensure oil temperature remains steady for even frying and to avoid greasy onion rings.
