Description

Ingredients

Mushroom Coating

  • 1 pound button or cremini mushrooms, cleaned and patted dry

Sauce and Garnish

  • 1/4 cup vegetable oil for frying
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced

  • 1 tablespoon rice vinegar

Instructions

  1. Prepare the mushrooms coating: Toss the cleaned and dried mushrooms with cornstarch, salt, and black pepper until evenly coated. This coating will help them achieve a crispy texture when fried.
  2. Heat oil and fry mushrooms: In a large skillet or wok, heat the vegetable oil over medium-high heat. Fry the mushrooms in batches for 3 to 4 minutes each batch, until golden brown and crispy. Use a slotted spoon to remove them from the oil and drain on paper towels to remove excess oil.
  3. Prepare the sauce base: Remove excess oil from the pan, leaving about 1 tablespoon. Add the minced garlic and ginger and sauté for about 30 seconds until fragrant, being careful not to burn them.
  4. Cook the sauce: Stir in the soy sauce, rice vinegar, chili sauce, and sugar. Cook the mixture for 1 to 2 minutes until the sauce slightly thickens, stirring frequently to combine flavors.
