Description

These Crispy Chickpea & Sweet Potato Fritters are a delightful blend of sweet potato, chickpeas, and flavorful spices, pan-fried to golden perfection. They make a tasty and satisfying appetizer or snack.


Ingredients

Sweet Potato Fritters:

  • 1 medium sweet potato (about 1 cup), peeled and grated
  • 1 can (15 oz) chickpeas, drained and mashed
  • 1/2 small red onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup chopped fresh parsley or cilantro
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 cup all-purpose flour (or chickpea flour for gluten-free)
  • 1 large egg
  • Salt and pepper to taste
  • 2-3 tablespoons olive oil for frying


Instructions

  1. Mix Ingredients: In a large bowl, combine sweet potato, chickpeas, red onion, garlic, herbs, cumin, paprika, flour, and egg. Season with salt and pepper. Form a thick batter.
  2. Fry Patties: Heat olive oil in a skillet. Scoop 2 tablespoons of mixture, flatten into a patty, and fry for 3-4 minutes per side until crispy.
  3. Serve: Drain on paper towels and serve warm with yogurt, tahini sauce, or lemon.

Notes

  • For added zing, mix in some lemon zest to the batter.
  • To bake, cook at 400°F (200°C) for 20-25 minutes, flipping halfway through.
