Description

This Crispy Chicken Caprese recipe combines tender chicken with the fresh flavors of tomato, basil, and melted mozzarella. A delicious and satisfying main course that’s easy to make!


Ingredients

Chicken:

  • 4 boneless skinless chicken breasts

Breading:

  • 1/2 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Caprese Toppings:

  • 4 slices fresh mozzarella cheese
  • 2 medium tomatoes (sliced)
  • 1/4 cup fresh basil leaves

Other:

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic glaze (for drizzling)

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C).
  2. Pound the Chicken: Pound the chicken breasts to an even thickness.
  3. Dredge the Chicken: Set up a dredging station with flour, beaten eggs, and a breadcrumb mixture. Coat each chicken breast in flour, egg, and breadcrumbs.
  4. Sear the Chicken: Sear the chicken in olive oil until golden brown.
  5. Bake: Transfer the skillet to the oven and bake until fully cooked.
  6. Top and Melt: Top each chicken breast with mozzarella and tomato slices, then return to the oven to melt the cheese.
  7. Finish: Top with fresh basil leaves and a drizzle of balsamic glaze before serving.

Notes

  • You can use store-bought balsamic reduction or make your own by simmering balsamic vinegar until thickened.
