Ingredients
Chicken:
- 4 boneless skinless chicken breasts
Breading:
- 1/2 cup all-purpose flour
- 2 large eggs (beaten)
- 1 cup Italian-style breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Caprese Toppings:
- 4 slices fresh mozzarella cheese
- 2 medium tomatoes (sliced)
- 1/4 cup fresh basil leaves
Other:
- 2 tablespoons olive oil
- 1 tablespoon balsamic glaze (for drizzling)
Instructions
- Preheat the Oven: Preheat the oven to 400°F (200°C).
- Pound the Chicken: Pound the chicken breasts to an even thickness.
- Dredge the Chicken: Set up a dredging station with flour, beaten eggs, and a breadcrumb mixture. Coat each chicken breast in flour, egg, and breadcrumbs.
- Sear the Chicken: Sear the chicken in olive oil until golden brown.
- Bake: Transfer the skillet to the oven and bake until fully cooked.
- Top and Melt: Top each chicken breast with mozzarella and tomato slices, then return to the oven to melt the cheese.
- Finish: Top with fresh basil leaves and a drizzle of balsamic glaze before serving.
Notes
- You can use store-bought balsamic reduction or make your own by simmering balsamic vinegar until thickened.
