Description

These Crispy Chicken Bell Pepper Ranch Burritos are a delicious fusion of flavors, combining crispy chicken tenders, colorful bell peppers, and a creamy ranch dressing, all wrapped up in a warm tortilla and toasted until golden and gooey.

Ingredients

Crispy Chicken:

  • 2 cups cooked crispy chicken tenders, chopped

Bell Pepper Mix:

  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste

Additional Ingredients:

  • ½ cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1 tablespoon butter or oil (for toasting)

Instructions

  1. Sauté Vegetables: In a skillet over medium heat, sauté bell peppers and onion in olive oil until softened and caramelized. Season with garlic powder, smoked paprika, salt, and pepper.
  2. Prepare Burritos: Spread ranch dressing on tortillas. Layer with chicken, sautéed vegetables, and cheeses. Roll tightly, folding in the sides.
  3. Cook Burritos: Toast in a skillet with butter/oil until golden and cheese melts, about 2–3 minutes per side.
  4. Serve: Enjoy warm with extra ranch or salsa for dipping.

Notes

  • You can swap crispy chicken tenders for grilled chicken if preferred.
  • For a spicy version, add jalapeños or hot sauce.
  • These burritos can be prepped ahead and frozen; reheat in a skillet or air fryer until crispy.
