Description

These Crispy Beef Taquitos with Chipotle Sauce are a delicious Mexican-inspired dish that can be fried or baked to crispy perfection. The flavorful beef filling is rolled in corn tortillas and served with a creamy and slightly spicy chipotle sauce.

Ingredients

For the Taquitos:

  • 1 lb ground beef
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 12 small corn tortillas
  • Vegetable oil for frying or brushing

For the Chipotle Sauce:

  • 1/2 cup sour cream
  • 1–2 chipotle peppers in adobo sauce
  • 1 tablespoon lime juice
  • Pinch of salt

Instructions

  1. Cook the Beef Filling: In a skillet, cook ground beef and onion until browned. Add garlic, spices, and cheese.
  2. Prepare the Taquitos: Warm tortillas, spoon beef mixture onto each, and roll tightly.
  3. Fry or Bake: Fry taquitos in oil until golden, or bake in the oven until crispy.
  4. Make the Chipotle Sauce: Blend sour cream, chipotle peppers, lime juice, and salt until smooth.
  5. Serve: Enjoy the taquitos hot with chipotle sauce.

Notes

  • You can use ground turkey or shredded rotisserie chicken as a filling alternative.
  • For a milder sauce, use fewer chipotle peppers or deseed them.
  • Freeze unbaked taquitos for quick future meals.
