Ingredients
For the Taquitos:

- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 10–12 small corn tortillas
- Vegetable oil for frying
For the Chipotle Sauce:
- 1/2 cup sour cream
- 1 tablespoon mayonnaise
- 1 chipotle pepper in adobo sauce, minced
- 1 teaspoon adobo sauce
- 1 teaspoon lime juice
- Pinch of salt
Instructions
- Cook the Beef: In a skillet over medium heat, cook the ground beef and onion until browned. Add garlic, chili powder, cumin, smoked paprika, salt, and pepper. Stir in cheese.
- Prepare Taquitos: Warm tortillas, spoon beef mixture onto each, and roll tightly. Secure with toothpicks.
- Fry Taquitos: Heat oil in a skillet, fry taquitos until golden and crispy. Drain on paper towels.
- Make Chipotle Sauce: Whisk together sour cream, mayonnaise, chipotle, adobo sauce, lime juice, and salt.
- Serve: Serve taquitos hot with chipotle sauce for dipping.
Notes
- You can bake the taquitos at 425°F for 15–20 minutes for a lighter option.
- Ground turkey or shredded chicken can be used as substitutes for beef.
