Description

Ingredients

Spring Rolls

  • 8 spring roll wrappers
  • 2 tablespoons water (for sealing)
  • Cooking spray or oil spray for air fryer

Filling

  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 1 cup finely chopped mushrooms
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/4 cup chopped fresh cilantro
  • 1/4 teaspoon crushed pepper flakes (adjust to taste)
  • Salt and black pepper to taste
  • 1 tablespoon vegetable oil (for sautéing)


Instructions

  1. Prepare the filling: Heat a skillet over medium heat and add the vegetable oil. Sauté the minced garlic until fragrant, about 1 minute. Add shredded cabbage, carrots, and mushrooms, cooking for about 5 minutes until the vegetables are tender but still retain some crispness.
  2. Flavor it: Drizzle soy sauce and sesame oil over the cooked vegetables. Stir well to combine and season with salt, black pepper, and crushed pepper flakes as desired. Remove from heat and stir in chopped cilantro. Let the filling cool slightly before wrapping.
  3. Wrap it: Place one spring roll wrapper on a clean surface. Spoon approximately two tablespoons of the filling onto the corner closest to you. Fold the corner tightly over the filling, tuck in the sides, and continue rolling like a burrito to form a sealed roll. Use a little water to moisten the edge to seal the wrapper. Repeat with remaining wrappers and filling.
