Instructions

  1. Prepare Chocolate Base: In a medium saucepan over medium heat, whisk together the milk, cocoa powder, sugar, and salt until fully combined and warmed through. Add the dark chocolate and stir continuously until completely melted and smooth.
  2. Add Vanilla and Cream: Remove the saucepan from heat and stir in the vanilla extract. Let the mixture cool slightly before mixing in the heavy cream to maintain the creaminess without curdling.
  3. Puree Raspberries: Using a blender or food processor, puree the raspberries and raspberry jam, if using, until smooth. Optionally strain the puree through a fine mesh sieve to remove seeds for a silkier texture.
  4. Combine Mixtures: Stir the raspberry puree into the chocolate mixture until evenly incorporated, creating a vibrant raspberry-chocolate base.
  5. Chill Base: Cover the mixture and chill in the refrigerator for at least 4 hours or overnight to let the flavors meld and to prepare for churning.
  6. Churn Ice Cream: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions, typically about 20–25 minutes, until it reaches soft-serve consistency.
  7. Freeze for Firmness: Transfer the churned ice cream to a freezer-safe container. Freeze for at least 2 hours to achieve a firmer texture before serving.
