Description
A delightful and visually charming dessert that transforms classic strawberry shortcake into sushi roll form. This recipe features a soft sponge cake rolled with a creamy strawberry and cream cheese filling, perfect for a fun and creative treat that serves 8.
Ingredients
Main Ingredients
- 1 sponge cake sheet (approx. 10×15 inches, homemade or store-bought)
- 8 ounces (225 g) cream cheese, softened
- ½ cup (60 g) powdered sugar
- 1 teaspoon (5 ml) vanilla extract
- 1 cup (240 ml) whipped cream
- 1 ½ cups (225 g) fresh strawberries, diced
- 3 tablespoons (45 g) strawberry preserves or jam
Optional Garnishes
- White chocolate drizzle
- Extra whipped cream
- Mint leaves
Instructions
- Prepare the cake: Lay the cooled sponge cake flat on a piece of parchment paper or a rolling mat, ensuring it is smooth and ready for spreading the fillings.
- Make the filling: In a mixing bowl, beat softened cream cheese with powdered sugar and vanilla extract until the mixture is smooth and creamy. Gently fold in the whipped cream until fully combined for a light and fluffy texture.
- Assemble the roll: Evenly spread strawberry preserves over the surface of the sponge cake, followed by an even layer of the cream cheese mixture. Sprinkle the diced fresh strawberries evenly on top to add fresh bursts of flavor.
- Roll: Starting from one short end, carefully use the parchment paper to help roll the cake into a tight log, being careful not to let the filling spill out. Once rolled, wrap it tightly with the parchment and chill in the refrigerator for 20 to 30 minutes to set the roll.
- Slice & serve: Using a sharp knife, cut the chilled roll into 1-inch thick slices to resemble sushi pieces. Arrange the slices neatly on a serving platter and garnish with a white chocolate drizzle, extra whipped cream, and mint leaves if desired for an elegant presentation.
Notes
- Ensure the sponge cake is completely cooled before assembling to prevent melting of the cream filling.
- Use full-fat cream cheese and freshly whipped cream for the best flavor and texture.
- Chilling the roll before slicing helps maintain its shape and makes cutting cleaner.
- For added flair, decorate with edible flowers or finely chopped nuts.
- This dessert is best served the same day but can be stored in the refrigerator for up to 24 hours.
