- 1 lb (450g) large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups baby spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add shrimp, season with salt and pepper, and cook for 2-3 minutes per side until pink and cooked through. Remove and set aside.
- In the same skillet, add minced garlic and cook for 1 minute until fragrant.
- Pour in the chicken broth and scrape up any browned bits from the pan.
- Add the heavy cream, Parmesan cheese, and Italian seasoning. Stir and simmer for 2-3 minutes until slightly thickened.
- Stir in sun-dried tomatoes and baby spinach, cooking until spinach wilts.
- Return shrimp to the skillet and cook for another 1-2 minutes until heated through.
- Garnish with fresh parsley and serve hot.
