Description

Creamy Tuscan Shrimp is a rich and flavorful dish featuring succulent shrimp cooked in a creamy garlic sauce with sun-dried tomatoes and spinach. Perfect for a quick weeknight dinner or a special occasion.


Ingredients

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups baby spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add shrimp, season with salt and pepper, and cook for 2-3 minutes per side until pink and cooked through. Remove and set aside.
  3. In the same skillet, add minced garlic and cook for 1 minute until fragrant.
  4. Pour in the chicken broth and scrape up any browned bits from the pan.
  5. Add the heavy cream, Parmesan cheese, and Italian seasoning. Stir and simmer for 2-3 minutes until slightly thickened.
  6. Stir in sun-dried tomatoes and baby spinach, cooking until spinach wilts.
  7. Return shrimp to the skillet and cook for another 1-2 minutes until heated through.
  8. Garnish with fresh parsley and serve hot.
