 - 1 pound large shrimp (peeled and deveined)
 - 1/2 teaspoon salt
 - 1/4 teaspoon black pepper
 
Sauce
- 3 cloves garlic (minced)
 - 1/2 teaspoon red pepper flakes (optional)
 - 1 cup cherry tomatoes (halved)
 - 1/3 cup sun-dried tomatoes (drained and chopped)
 - 1/2 cup chicken broth
 - 3/4 cup heavy cream
 - 1/2 cup grated Parmesan cheese
 
Finishing Touches
- 3 cups baby spinach
 - 1 tablespoon lemon juice
 - 1 tablespoon chopped fresh basil (optional)
 
Instructions
- Cook Shrimp: Heat olive oil in a skillet, season shrimp, cook until done, then set aside.
 - Prepare Sauce: In the same skillet, sauté garlic, red pepper flakes, cherry tomatoes, and sun-dried tomatoes. Add broth, simmer, then stir in cream and Parmesan until creamy.
