Creamy Tuscan Sauce

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes in oil, drained and chopped
  • 2 cups baby spinach
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste

To Serve

Instructions

  1. Cook the Ravioli: Bring a large pot of salted water to a boil. Add the ravioli, and cook according to package directions until tender. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. Sauté the Garlic and Sun-Dried Tomatoes: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the chopped sun-dried tomatoes and cook for another 1-2 minutes.
  3. Make the Creamy Sauce: Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese and Italian seasoning. Cook for 3-4 minutes, until the sauce slightly thickens.
  4. Add Spinach: Add the baby spinach and cook until wilted, about 1-2 minutes. Season the sauce with salt and black pepper to taste.
  5. Toss Ravioli: Add the cooked ravioli to the skillet, tossing to coat in the creamy sauce. If the sauce is too thick, add some reserved pasta water a little at a time until the desired consistency is reached.
  6. Garnish and Serve: Transfer the creamy Tuscan ravioli to plates or a serving bowl. Garnish with extra Parmesan and chopped basil or parsley if desired. Serve immediately and enjoy!
