Sauce:
- 2 tablespoons olive oil
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 8 ounces mushrooms (sliced)
- 1/2 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup vegetable or chicken broth
- 3/4 cup heavy cream
Additional:
- 2 (5-ounce) cans tuna in olive oil (drained)
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped parsley (optional, for garnish)
Instructions
- Cook the pasta: Boil the pasta in salted water until al dente. Drain and set aside.
- Sauté aromatics: In a skillet, sauté onions until soft, then add garlic and mushrooms. Cook until mushrooms are browned.
- Season and simmer: Season with thyme, salt, and pepper. Add broth, simmer for 2 minutes.
- Add cream: Reduce heat, stir in cream, and cook until slightly thickened.
- Combine ingredients: Add tuna, cooked pasta, and Parmesan. Toss everything together.
- Finish and serve: Cook briefly to coat, then serve warm, garnished with parsley.
Notes
- For a lighter version, use half-and-half instead of cream.
- You can also substitute tuna with canned salmon or shredded rotisserie chicken.
