Description

Indulge in a deliciously creamy tomato pasta that’s quick to make and perfect for a cozy meal. This vegetarian dish features a rich tomato sauce with hints of garlic and herbs, all tossed with tender pasta and finished with a creamy, cheesy sauce.

Ingredients

Pasta:

  • 12 oz pasta (such as penne or fettuccine)

Sauce:

  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 1 small yellow onion (diced)
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup tomato sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 3/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh basil (plus more for garnish)

Instructions

  1. Cook the pasta: In a large pot of salted boiling water, cook the pasta according to package instructions. Drain and set aside.
  2. Prepare the sauce: In a large skillet over medium heat, sauté garlic and onion in olive oil until soft. Add crushed tomatoes, tomato sauce, salt, pepper, oregano, and red pepper flakes. Simmer for 8-10 minutes.
  3. Add cream and cheese: Reduce heat, stir in heavy cream, and let simmer for 2-3 minutes. Add Parmesan cheese and melt into the sauce.
  4. Combine and serve: Toss cooked pasta in the sauce, add fresh basil, and serve garnished with more basil and Parmesan.

Notes

  • You can use half-and-half or coconut cream as a lighter or dairy-free alternative to heavy cream.
  • Enhance with sautéed mushrooms, spinach, or grilled chicken for added protein.
