Ingredients
- Pasta (fettuccine, penne, or your favorite shape)
- Olive oil
- Fresh garlic, finely chopped
- Red pepper flakes
- Canned crushed tomatoes (fire-roasted optional)
- Heavy cream
- Grated Parmesan cheese
- Salt
- Black pepper
- Fresh basil leaves
Instructions
- Boil salted water in a large pot. Cook pasta until al dente. Reserve 1 cup of pasta water, then drain.
- Heat olive oil in a large pan over medium heat. Add garlic and sauté until fragrant and golden, stirring constantly. Add red pepper flakes.
- Pour in crushed tomatoes and scrape the pan bottom. Simmer for 8–10 minutes until the sauce thickens. Season with salt and pepper.
- Reduce heat to low and stir in heavy cream until the sauce turns pink. Add Parmesan and stir until melted. Adjust thickness with reserved pasta water if needed.
- Add drained pasta and toss to coat evenly. Cook for 1–2 minutes to let flavors blend. Add more Parmesan if desired.
Notes
- Top with basil, extra Parmesan, black pepper, or olive oil drizzle.
- Serve with salad, crusty bread, roasted veggies, or grilled chicken.
- Twirl into nests for dinner parties or serve family-style in a big bowl.
- Store in fridge up to 3 days; freeze sauce separately for best results.
- Reheat with a splash of milk or cream over low heat or in the microwave.
- Make vegan with plant-based cream and cheese substitutes.
- Fresh tomatoes can replace canned—simmer longer to concentrate flavor.
- Add more red pepper or chili paste for a spicier version.
- Include chicken, shrimp, sausage, or chickpeas for added protein.
