  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • ½ cup heavy cream
  • ½ cup sliced pepperoncini
  • 2 tablespoons brine from pepperoncini jar
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • Chopped parsley for garnish


Instructions

  1. Season chicken breasts: Season chicken with salt and pepper.
  2. Sear chicken: Heat olive oil and butter in a large skillet. Sear chicken for 5–6 minutes per side until golden and cooked through.
  3. Make sauce: Sauté garlic, then add chicken broth, heavy cream, pepperoncini slices, brine, and oregano. Simmer until thickened.
  4. Add Parmesan: Stir in Parmesan cheese until melted and smooth.
  5. Combine: Return chicken to skillet, spoon sauce over the top, and cook for 2 more minutes.
  6. Garnish and serve: Garnish with parsley and serve hot.
