Ingredients

Ingredients:

  • 1 tbsp olive oil
  • 1 lb Italian sausage (mild or spicy), casings removed
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes, with juices
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups chopped fresh spinach or kale
  • salt and pepper to taste


Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and fully cooked, about 6–8 minutes.
  2. Add diced onion, garlic, carrots, and celery. Cook for 4–5 minutes, until vegetables begin to soften.
  3. Stir in Italian seasoning and red pepper flakes if using. Pour in the chicken broth and diced tomatoes with their juices.
  4. Bring to a boil, then reduce heat and let simmer for 10–15 minutes. Stir in heavy cream and Parmesan cheese.
  5. Simmer for another 5 minutes until the soup is creamy and slightly thickened. Add spinach and cook until wilted, about 2 minutes.
  6. Taste and adjust salt and pepper as needed. Serve hot with extra Parmesan if desired.

Notes

  • You can substitute half-and-half for heavy cream for a lighter version.
