- 1 lb Italian sausage (mild or spicy), casings removed
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes (optional)
- 4 cups chicken broth
- 1 (14.5 oz) can diced tomatoes, with juices
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups chopped fresh spinach or kale

Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and fully cooked, about 6–8 minutes.
- Add diced onion, garlic, carrots, and celery. Cook for 4–5 minutes, until vegetables begin to soften.
- Stir in Italian seasoning and red pepper flakes if using. Pour in the chicken broth and diced tomatoes with their juices.
- Bring to a boil, then reduce heat and let simmer for 10–15 minutes. Stir in heavy cream and Parmesan cheese.
- Simmer for another 5 minutes until the soup is creamy and slightly thickened. Add spinach and cook until wilted, about 2 minutes.
- Taste and adjust salt and pepper as needed. Serve hot with extra Parmesan if desired.
