Ingredients

  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/4 cup tomato paste
  • 6 cups low-sodium chicken broth
  • 1 can (15 oz) diced tomatoes with juice
  • 1 cup ditalini pasta
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach, roughly chopped
  • Salt and black pepper to taste


Instructions

  1. Prepare the Soup: Heat olive oil in a large pot. Cook Italian sausage until browned. Add onion, garlic, Italian seasoning, and red pepper flakes; cook until fragrant.
