Description

These Creamy Oven-Baked Chicken Taquitos are a delicious and easy-to-make dish that’s perfect for a family meal or party appetizer. Stuffed with a creamy chicken and cheese filling, these taquitos bake up golden and crispy for a satisfying snack or main course.

Ingredients

For the filling:

  • 2 cups cooked shredded chicken
  • 4 ounces cream cheese (softened)
  • 1/2 cup shredded cheddar or pepper jack cheese
  • 1/4 cup salsa
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon salt

For assembling:

  • 1012 small flour or corn tortillas
  • olive oil spray or cooking spray

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Prepare the filling: In a mixing bowl, combine the shredded chicken, cream cheese, shredded cheese, salsa, garlic powder, onion powder, cumin, chili powder, and salt. Mix until creamy and well combined.
  3. Assemble the taquitos: Warm the tortillas slightly to make them pliable. Place 2–3 tablespoons of the filling near one edge of each tortilla. Roll up tightly and place seam-side down on the prepared baking sheet. Lightly spray the tops with olive oil or cooking spray.
  4. Bake: Bake the taquitos for 15–18 minutes or until golden and crispy.
  5. Serve: Serve warm with sour cream, guacamole, or salsa for dipping.

Notes

  • For a spicier version, use hot salsa or add chopped jalapeños to the filling.
  • These taquitos freeze well—assemble, freeze before baking, and bake straight from frozen, adding a few extra minutes.
