Ingredients
For the Soup:
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 medium yellow onion (diced)
- 3 cloves garlic (minced)
- 1 1/2 pounds mixed mushrooms (such as cremini, shiitake, and button, cleaned and sliced)
- 1/4 cup dry white wine (optional)
- 4 cups vegetable broth
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
- 1 bay leaf
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3/4 cup heavy cream
- 2 tablespoons all-purpose flour (optional, for thicker soup)
- chopped fresh parsley for garnish (optional)
Instructions
- Sauté Aromatics: In a large pot, heat butter and olive oil. Sauté onion until translucent. Add garlic and cook briefly.
- Cook Mushrooms: Add mushrooms and cook until browned.
- Deglaze: Pour in white wine and let it reduce.
- Add Broth and Seasonings: Stir in flour, if using, then add broth, thyme, bay leaf, salt, and pepper. Simmer.
- Blend and Finish: Partially blend the soup, stir in cream, and adjust seasoning. Serve hot, garnished with parsley.
