Description

A rich and comforting recipe featuring tender pork chops cooked in a creamy mushroom sauce. This dish combines seared pork chops with sautéed garlic mushrooms, finished with a luscious cream-based sauce, perfect for a hearty family dinner.

Ingredients

Pork Chops and Seasoning

  • 4-6 pork chops
  • Garlic herb seasoning to taste (or salt, pepper, dried herbs, and garlic powder)
  • 1 tablespoon olive oil

Mushroom Sauce

  • 1 (8-oz) package sliced mushrooms
  • 3 cloves garlic, peeled and crushed
  • 2 tablespoons butter
  • 1 tablespoon flour
  • 1 cup chicken broth
  • ½ cup heavy cream
  • 1 teaspoon cornstarch
  • Fresh chopped parsley (optional, for serving)

Instructions

  1. Season pork chops: Lightly pound the pork chops to tenderize them for extra softness. Generously season both sides with garlic herb seasoning or your preferred mix of salt, pepper, dried herbs, and garlic powder.
  2. Sear pork chops: Heat a large skillet over medium-high heat and add olive oil. Once hot, sear the pork chops until golden on the outside and just cooked through, working in batches if necessary. Remove and set aside on a plate.
  3. Sauté the mushrooms: Using the same skillet, add the sliced mushrooms and cook over medium to medium-high heat, stirring occasionally, until golden and tender, about 6 minutes. Add the crushed garlic and cook for an additional 2-3 minutes until fragrant and lightly golden.
  4. Make the roux: Reduce heat to medium-low. Stir in butter until melted, then sprinkle flour over the mushrooms and stir continuously until the flour is fully incorporated with no dry spots visible.
  5. Start the sauce: Gradually pour in the chicken broth while stirring to avoid lumps. Simmer the mixture over medium to medium-high heat until it thickens slightly, about 2-3 minutes.
  6. Add cream: Reduce the heat to low. Whisk together the heavy cream and cornstarch until smooth, then slowly add to the mushroom sauce, stirring until the sauce is smooth and creamy.
  7. Warm through: Nestle the seared pork chops back into the sauce and gently simmer on the stovetop until heated through. Serve the pork chops with the creamy mushroom sauce spooned over the top, seasoned with cracked black pepper and a sprinkle of fresh chopped parsley if desired.

Notes

  • Lightly pounding the pork chops helps tenderize the meat for a better texture.
  • A large skillet is recommended to sear and prepare the sauce in one pan, enhancing flavor.
  • Sautéing mushrooms until golden tender brings out their rich flavor.
  • Simmering pork chops in the sauce ensures they are heated through while soaking up the creamy flavors.
