Description

Indulge in a comforting bowl of Creamy Mushroom and Asparagus Chicken Penne, a delicious pasta dish that combines tender chicken, earthy mushrooms, and fresh asparagus in a rich and creamy sauce. This easy-to-make recipe is perfect for a cozy family dinner or entertaining guests.

Ingredients

Penne Pasta:

12 oz penne pasta

Olive Oil:

1 tablespoon

Chicken:

1 pound boneless skinless chicken breast, cut into bite-sized pieces

Mushrooms:

2 cups sliced cremini or white mushrooms

Asparagus:

1 bunch, trimmed and cut into 1-inch pieces

Garlic:

3 cloves, minced

Butter:

1 tablespoon

Heavy Cream:

1 cup

Parmesan Cheese:

½ cup, grated

Dried Thyme:

½ teaspoon

Salt:

½ teaspoon

Black Pepper:

¼ teaspoon

Parsley:

Fresh parsley for garnish

Instructions

  1. Cook the Penne: Cook the penne pasta according to package directions until al dente. Drain and set aside.
  2. Sauté the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken, season with salt and pepper, and sauté until golden and cooked through.
  3. Cook the Vegetables: In the same skillet, melt butter and sauté mushrooms until browned. Add garlic, then stir in the asparagus and cook until crisp-tender.
  4. Make the Creamy Sauce: Reduce heat, pour in heavy cream, add Parmesan, thyme, salt, and pepper. Simmer until slightly thickened.
  5. Combine and Serve: Add chicken and pasta to the skillet, toss to coat, and cook briefly. Garnish with parsley and serve hot.

Notes

  • Substitute broccoli or spinach for asparagus if needed.
  • For a lighter version, use half-and-half instead of heavy cream.
  • Add red pepper flakes for a spicy kick.
