Description

Ingredients

Lobster Bisque:

  • 2 lobster tails (about 68 oz each)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 celery stalk, chopped
  • 1 carrot, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1/2 teaspoon paprika
  • 1/4 cup brandy or dry sherry
  • 3 cups seafood or fish stock
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried)
  • 1 bay leaf
  • Salt and black pepper to taste
  • Chopped chives or parsley for garnish (optional)


Instructions

  1. Prepare Lobster: Boil lobster tails until cooked, remove meat from shells, chop, and set aside. Reserve shells.
  2. Sauté Vegetables: In a pot, sauté onion, celery, carrot until softened. Add garlic, tomato paste, paprika, cook briefly.
  3. Deglaze and Simmer: Add brandy/sherry, lobster shells, stock, thyme, bay leaf, salt, pepper. Simmer to develop flavor.
  4. Purée Soup: Remove shells and bay leaf. Purée soup until smooth. Stir in cream, milk, lobster meat. Simmer until heated through.
  5. Adjust Seasoning and Serve: Taste and adjust seasoning. Garnish with herbs if desired.

Notes

  • For extra richness, add an extra tablespoon of butter when adding the lobster meat.
  • You can substitute shrimp or crab for a more budget-friendly version.
