Instructions

  1. Sauté the aromatics: Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook for 4 to 5 minutes until softened and translucent. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  2. Add potatoes and liquids: Add the diced potatoes, vegetable broth, and water to the pot. Bring the mixture to a boil over high heat.
  3. Simmer until potatoes are tender: Reduce the heat to low and let the soup simmer gently for 15 to 18 minutes, until the potatoes are very tender and easily pierced with a fork.
