Description

This Creamy Italian Sausage and Rice Casserole is a comforting one-pan dish featuring spicy Italian sausage, sautéed mushrooms and onions, tender rice cooked in chicken broth, and a creamy finish with sour cream and Italian seasoning. Topped with crunchy sliced almonds and fresh parsley, this casserole offers a delicious blend of textures and flavors, perfect for a quick and satisfying weeknight meal.

Ingredients

Protein and Vegetables

  • 1 pound spicy Italian sausage
  • 1/2 cup finely chopped onion
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced

Grains and Liquids

  • 1 1/2 cups long grain white rice
  • 3 cups chicken broth

Dairy and Seasonings

  • 1/2 cup light sour cream
  • 1/2 teaspoon Italian seasoning

Toppings

  • 1/4 cup sliced almonds
  • 2 tablespoons chopped parsley

Instructions

  1. Cook Italian Sausage: In a large skillet over medium heat, cook the spicy Italian sausage for 5-6 minutes, breaking it into small pieces as it cooks. Once browned, remove the sausage from the skillet and drain any excess grease. Set aside.
  2. Sauté Vegetables: In the same skillet, add the sliced mushrooms and finely chopped onions. Sauté for 4-5 minutes until the vegetables are soft and fragrant. Add the minced garlic and cook for an additional minute to release its aroma.
  3. Cook Rice: Stir in the long grain white rice and pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the skillet and let it cook for 20 minutes, or until the rice is tender and has absorbed most of the broth.
  4. Finish Dish: Return the cooked Italian sausage to the skillet and stir in the light sour cream and Italian seasoning until well combined and creamy. Remove from heat.
  5. Serve: Spoon the casserole onto plates or a serving dish. Garnish with sliced almonds and chopped parsley for a crunchy and fresh finishing touch before serving.

Notes

  • For a milder flavor, use mild Italian sausage instead of spicy.
  • If you prefer, substitute light sour cream with Greek yogurt for a tangier twist.
  • To make this dish gluten free, ensure the chicken broth is gluten free.
  • Adding a handful of grated Parmesan cheese before serving enhances flavor.
  • This casserole can be prepared ahead and reheated gently on the stovetop or in the microwave.
