Ingredients
Main Ingredients
- 1 tablespoon olive oil
- 1 pound shrimp (tails on or off)
- 1/4 teaspoon salt (to taste)
- 1/4 teaspoon black pepper (to taste)
- 2 tablespoons unsalted butter
- 6 cloves garlic (minced)
- 1/2 cup dry white wine (or chicken broth)
- 1 1/2 cups reduced fat cream
- 1/2 cup parmesan cheese (freshly grated)
- 2 tablespoons parsley (fresh, chopped)
Instructions
- Cook the Shrimp: Heat olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper, then fry for 1-2 minutes on each side until just cooked through and pink. Transfer the cooked shrimp to a bowl and set aside.
- Sauté Garlic: In the same skillet, melt the butter. Add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
- Deglaze and Reduce: Pour in the white wine or chicken broth and allow it to reduce by half while scraping up any browned bits from the bottom of the pan to build flavor.
- Add Cream and Simmer: Lower the heat to medium-low and stir in the reduced fat cream. Bring the sauce to a gentle simmer, stirring occasionally, and season with salt and pepper to taste.
- Incorporate Cheese and Thicken: Add the freshly grated parmesan cheese to the sauce. Allow it to gently simmer for another minute or so until the cheese melts and the sauce thickens to a creamy consistency.
- Combine and Finish: Return the cooked shrimp to the skillet and stir to coat in the sauce. Sprinkle with fresh chopped parsley. Taste the sauce and adjust seasoning with additional salt and pepper if necessary.
- Serve: Serve the creamy garlic shrimp over your choice of pasta, rice, or steamed vegetables for a delightful meal.
Notes
- For a non-alcoholic version, substitute dry white wine with chicken broth.
- Shrimp can be cooked with tails on or off based on preference.
- Fresh parsley adds a bright finish but can be substituted with dried parsley in a pinch.
- Use grated parmesan cheese for best melting and flavor; pre-shredded cheese may affect texture.
- Serve immediately to enjoy the sauce at its creamiest texture.
