Ingredients
For the mushrooms:
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 16 oz cremini or button mushrooms, cleaned and halved
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon Italian seasoning
For the sauce:
- 1 cup heavy cream
- ⅓ cup grated Parmesan cheese
- 1 cup baby spinach, roughly chopped
- ¼ cup sun-dried tomatoes, drained and chopped
- Chopped fresh parsley for garnish (optional)
Instructions
- Prepare the mushrooms: Heat olive oil and butter in a large skillet over medium heat. Add garlic and sauté until fragrant. Add mushrooms, salt, pepper, and Italian seasoning. Cook until golden and tender.
- Make the sauce: Reduce heat, pour in the heavy cream, and stir in Parmesan cheese. Simmer until slightly thickened. Add spinach and sun-dried tomatoes, cook until wilted.
