Description

Ingredients

For the mushrooms:

  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 16 oz cremini or button mushrooms, cleaned and halved
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon Italian seasoning

For the sauce:

  • 1 cup heavy cream
  • ⅓ cup grated Parmesan cheese
  • 1 cup baby spinach, roughly chopped
  • ¼ cup sun-dried tomatoes, drained and chopped
  • Chopped fresh parsley for garnish (optional)


Instructions

  1. Prepare the mushrooms: Heat olive oil and butter in a large skillet over medium heat. Add garlic and sauté until fragrant. Add mushrooms, salt, pepper, and Italian seasoning. Cook until golden and tender.
  2. Make the sauce: Reduce heat, pour in the heavy cream, and stir in Parmesan cheese. Simmer until slightly thickened. Add spinach and sun-dried tomatoes, cook until wilted.
  3. Serve: Garnish with parsley and serve warm.
