Chicken

  • 4 boneless, skinless chicken breasts
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Sauce

  • 2 tablespoons unsalted butter
  • 8 ounces cremini or white mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon dried thyme or 1 teaspoon fresh thyme
  • Chopped parsley for garnish (optional)


Instructions

  1. Season the chicken: Pat the chicken breasts dry and season both sides with salt and black pepper to ensure flavorful meat.
  2. Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5–6 minutes on each side until they develop a golden brown crust and are cooked through. Remove the chicken from the skillet and set aside on a plate.
  3. Cook the mushrooms: Lower the heat to medium and add the unsalted butter to the same skillet. Once melted, add the sliced mushrooms. Cook for 6–8 minutes, stirring occasionally, until the mushrooms become browned and tender.
  4. Add garlic: Stir in the minced garlic and cook for an additional 1 minute until fragrant, being careful not to burn the garlic.
  5. Make the sauce: Pour in the chicken broth, scraping the bottom of the skillet to loosen any browned bits which add flavor. Stir in the heavy cream, grated Parmesan cheese, and thyme. Let the sauce simmer gently for 3–5 minutes until it thickens slightly.
  6. Return chicken to skillet: Place the seared chicken breasts back in the skillet and spoon the creamy mushroom sauce over them. Simmer for another 2–3 minutes to reheat the chicken and meld the flavors.
  7. Garnish and serve: Sprinkle chopped parsley over the top if desired, and serve immediately with your choice of sides such as mashed potatoes, rice, or pasta.
