Ingredients

- 1 tablespoon olive oil
- 1 pound chicken sausage links, sliced into rounds
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/2 cup grated Parmesan cheese
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil: In a large skillet over medium heat, heat olive oil.
- Cook sausage: Add sliced chicken sausage and cook until browned on both sides, about 5 minutes. Remove sausage and set aside.
- Sauté aromatics: In the same skillet, sauté onion and garlic until softened, about 2 minutes.
- Cook vegetables: Add bell peppers and zucchini, cook until tender, about 5 minutes. Add cherry tomatoes and cook for another 2 minutes.
- Combine liquids: Pour in chicken broth and heavy cream, season with Italian seasoning, red pepper flakes, salt, and black pepper. Simmer until slightly thickened, about 5 minutes.
- Finish dish: Return sausage to the skillet, stir in Parmesan cheese until melted and creamy. Garnish with parsley before serving.
