Description

Creamy Chicken Pesto Lasagna Roll Ups are a delicious twist on classic lasagna, featuring tender chicken, rich pesto, creamy cheese, and lasagna noodles rolled up and baked to perfection.


Ingredients

  • 10 lasagna noodles, cooked and drained
  • 2 cups cooked shredded chicken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup basil pesto
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant, about 1 minute.
  3. Stir in heavy cream and half of the pesto; cook until slightly thickened, then set aside.
  4. In a mixing bowl, combine shredded chicken, ricotta cheese, 1/2 cup mozzarella cheese, 1/4 cup Parmesan, and remaining pesto. Mix well.
  5. Lay out lasagna noodles and spread 2-3 tablespoons of the chicken mixture onto each noodle. Roll them up carefully.
  6. Spread a thin layer of the cream-pesto sauce on the bottom of a baking dish.
  7. Place roll ups seam-side down in the dish. Pour remaining sauce over the roll ups.
  8. Sprinkle remaining mozzarella and Parmesan cheese on top.
  9. Cover with foil and bake for 20 minutes. Remove foil and bake another 10 minutes until bubbly and golden.
  10. Garnish with fresh basil if desired and serve warm.

Notes

  • You can use store-bought or homemade pesto.
  • Rotisserie chicken works well for convenience.
  • Make ahead and refrigerate up to 24 hours before baking.
