Description

This Chicken Orzo recipe is a flavorful and comforting one-pan dish featuring tender chicken pieces, toasted orzo pasta, and a medley of fresh vegetables and herbs. Cooked quickly on the stovetop, it combines the savory taste of chicken broth with aromatic spices, cherry tomatoes, and spinach for a balanced and satisfying meal perfect for weeknight dinners.

Ingredients

Protein and Vegetables

  • 1 lb chicken breasts, cut into bite-sized pieces
  • ½ cup cherry tomatoes, halved
  • ½ cup spinach, chopped
  • Fresh basil, for garnish (optional)

Pantry Staples and Seasonings

  • 2 tablespoons olive oil
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Heat olive oil: Heat olive oil in a large skillet over medium heat to prepare for cooking the chicken.
  2. Cook chicken: Season the chicken pieces with salt and pepper. Add them to the skillet and cook for 5-7 minutes until they become golden brown and are cooked through. Remove the chicken from the skillet and set aside.
  3. Toast orzo: In the same skillet, add the orzo pasta. Toast it for 1-2 minutes, stirring occasionally to prevent burning and to enhance its nutty flavor.
  4. Simmer orzo: Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 8-10 minutes until the orzo is tender and most of the liquid has been absorbed.
  5. Add remaining ingredients: Return the cooked chicken to the skillet along with the cherry tomatoes, chopped spinach, garlic powder, dried oregano, and red pepper flakes if using.
  6. Cook spinach and combine flavors: Stir everything together and cook for an additional 2-3 minutes until the spinach wilts and the flavors meld.
  7. Season and serve: Taste the dish and adjust the seasoning with salt and pepper if necessary. Garnish with fresh basil leaves before serving warm.

Notes

  • If you prefer a spicier dish, increase the amount of red pepper flakes.
  • Substitute chicken broth with vegetable broth to make a lighter version.
  • For a creamier texture, stir in a tablespoon of cream or Greek yogurt before serving.
  • This dish pairs well with a simple green salad or crusty bread.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop or microwave.
