Description

Ingredients

Main Soup:

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, peeled and sliced
  • 2 celery stalks, sliced
  • ¼ cup all-purpose flour
  • 4 cups low-sodium chicken broth
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Additional Ingredients:

  • 1½ cups cooked shredded chicken
  • 1 (16-ounce) package potato gnocchi
  • 2 cups fresh baby spinach
  • ½ cup grated Parmesan cheese

Instructions

  1. Saute Veggies: In a large pot, melt butter with olive oil over medium heat. Add the onion, garlic, carrots, and celery. Cook until softened.
  2. Add Flour: Sprinkle in flour, stir for 1 minute.
  3. Stir in Liquids: Whisk in chicken broth, milk, and cream. Add Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  4. Add Chicken & Gnocchi: Stir in chicken and gnocchi. Simmer until gnocchi are tender.
  5. Finish Soup: Add spinach and Parmesan. Stir until wilted. Adjust seasoning. Serve hot.

Notes

  • Use rotisserie chicken for convenience.
  • Substitute half-and-half for heavy cream if preferred.
