Ingredients

Shredded Chicken:

  • 2 cups cooked shredded chicken breast

  • 1 small yellow onion (diced)
  • 2 cloves garlic (minced)
  • 3 cups fresh spinach (chopped)

Sauce:

  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Cheeses:

  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Additional:

  • 2 cups cooked pasta or rice (optional)
  • nonstick cooking spray

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F and grease a 9×13-inch baking dish with nonstick spray.
  2. Sauté Vegetables: In a skillet, sauté onion in olive oil until soft. Add garlic, then spinach, and cook until wilted.
  3. Mix Ingredients: In a bowl, combine chicken, sautéed vegetables, soup, sour cream, milk, seasonings, and pasta/rice if using.
  4. Bake: Transfer mixture to baking dish, top with cheeses, and bake for 25–30 minutes until bubbly and golden.
  5. Rest and Serve: Let the casserole rest for 5 minutes before serving.

Notes

  • For extra richness, use Greek yogurt instead of sour cream or add cooked bacon.
