Ingredients
For the Soup:
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 3 medium carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- ½ teaspoon black pepper
- ½ teaspoon salt
- ¼ cup all-purpose flour
- 6 cups low-sodium chicken broth
- 1 cup long-grain white rice
- 2 cups cooked shredded chicken (such as rotisserie)
- 1 cup heavy cream
- 1 cup whole milk
Instructions
- Sauté Vegetables: In a large pot, heat butter and olive oil. Sauté onion, garlic, carrots, and celery until softened.
- Add Seasonings: Stir in thyme, parsley, pepper, and salt. Sprinkle flour, cook to eliminate raw taste.
- Make Soup: Whisk in chicken broth, add rice. Simmer until rice is tender.

Notes
- For a lighter version, use half-and-half instead of cream.
