Ingredients

For the Soup:

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ¼ cup all-purpose flour
  • 6 cups low-sodium chicken broth
  • 1 cup long-grain white rice
  • 2 cups cooked shredded chicken (such as rotisserie)
  • 1 cup heavy cream
  • 1 cup whole milk


Instructions

  1. Sauté Vegetables: In a large pot, heat butter and olive oil. Sauté onion, garlic, carrots, and celery until softened.
  2. Add Seasonings: Stir in thyme, parsley, pepper, and salt. Sprinkle flour, cook to eliminate raw taste.
  3. Make Soup: Whisk in chicken broth, add rice. Simmer until rice is tender.

Notes

  • For a lighter version, use half-and-half instead of cream.
