Ingredients
For the Pasta:
- 12 ounces spaghetti pasta
For the Chicken:
- 2 tablespoons olive oil
- 1 pound boneless skinless chicken breasts, cut into thin strips
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
For the Sauce:
- 2 tablespoons butter
- 3 cloves garlic, minced
- 8 ounces cremini or button mushrooms, sliced
- 1 small onion, finely diced
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon crushed red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped for garnish
Instructions
- Cook the Pasta: Boil salted water and cook spaghetti until al dente. Reserve ½ cup pasta water, drain, and set aside.
- Cook the Chicken: Season and cook chicken in olive oil until golden brown. Set aside.
- Make the Sauce: Sauté garlic, mushrooms, and onion in butter. Add chicken broth, heavy cream, Parmesan, seasonings, and cook until slightly thickened.
- Combine: Return chicken to skillet, add spaghetti, toss together. Add reserved pasta water if needed.
- Garnish and Serve: Top with parsley and serve hot.
Notes
- For extra flavor, add a splash of white wine with the broth.
- Spinach or sun-dried tomatoes are great additions.
