Description
Creamy Cauliflower Mash is a delicious low-carb alternative to traditional mashed potatoes. Made with steamed cauliflower blended with butter, heavy cream, and garlic, this smooth and flavorful side dish is perfect for any meal. It’s easy to make, customizable for dairy-free diets, and topped with fresh herbs for an extra burst of color and taste.
Ingredients
Cauliflower Mash
- 1 large head of cauliflower (about 4 cups florets)
- 2 tablespoons butter (or dairy-free butter for a dairy-free option)
- ¼ cup heavy cream (or almond milk for a dairy-free option)
- 2 cloves garlic, minced
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder (optional for extra flavor)
- ¼ cup grated Parmesan cheese (optional for extra creaminess, can be omitted for dairy-free)
Garnish
- Fresh chives or parsley for garnish (optional)
Instructions
- Prepare the Cauliflower: Cut the cauliflower head into florets and rinse well. This ensures even cooking and removes any dirt or impurities.
- Steam the Cauliflower: Place the cauliflower florets in a steaming basket over boiling water and cover. Steam for about 10-12 minutes or until the cauliflower is very tender and easily pierced with a fork.
- Sauté the Garlic: While the cauliflower steams, melt the butter in a small pan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned. This step enhances the garlic’s aroma and flavor in the mash.
- Blend the Cauliflower: Transfer the steamed cauliflower to a food processor or blender. Add the sautéed garlic and butter, heavy cream (or almond milk), salt, black pepper, and garlic powder if using. Blend until smooth and creamy. Stop occasionally to scrape down the sides for an even texture.
- Add Parmesan Cheese: If using, stir in the grated Parmesan cheese for extra creaminess and a savory kick. Blend briefly again to incorporate the cheese smoothly.
- Adjust Seasoning: Taste the mash and adjust salt, pepper, or creaminess by adding a little more cream or seasoning as needed.
- Serve and Garnish: Spoon the cauliflower mash into serving dishes and garnish with fresh chopped chives or parsley. Serve warm as a comforting side dish.
Notes
- For a dairy-free version, use dairy-free butter and almond milk, and omit Parmesan cheese.
- You can add roasted garlic instead of sautéed garlic for a sweeter, deeper flavor.
- Be careful not to oversteam the cauliflower to prevent a watery mash.
- This mash can be prepared ahead of time and reheated gently with a splash of cream or milk to restore creaminess.
