Ingredients

For the Soup:

  • 1 tbsp olive oil
  • 1 lb boneless skinless chicken breast, cubed
  • 1 tbsp Cajun seasoning, plus more to taste
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 1 ½ cups cooked pasta (penne or rotini)
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley or green onions for garnish


Instructions

  1. Cook the Chicken: In a large pot or Dutch oven, heat olive oil over medium heat. Season cubed chicken with Cajun seasoning and cook for 5–6 minutes, until browned and cooked through. Remove and set aside.
  2. Sauté Vegetables: In the same pot, sauté onion and bell peppers for 4–5 minutes until softened. Add garlic and cook for 30 seconds more.
  3. Prepare the Broth: Pour in the chicken broth and bring to a simmer. Stir in heavy cream and cream cheese, whisking until smooth and fully combined.
  4. Combine Ingredients: Return the chicken to the pot and stir in the cooked pasta. Simmer for another 5 minutes, then stir in Parmesan cheese.
  5. Season and Serve: Season with additional Cajun seasoning, salt, and pepper as desired. Remove from heat and garnish with chopped parsley or green onions before serving.

Notes

  • For a lighter version, substitute half-and-half for heavy cream.
  • Add spinach or mushrooms for extra veggies.
