Description

This creamy broccoli mac and cheese recipe combines tender elbow macaroni and fresh broccoli florets in a rich, cheesy sauce made with sharp cheddar and mozzarella. Ready in just 25 minutes, it’s a comforting and wholesome meal perfect for family dinners or cozy nights in.

Ingredients

Pasta and Vegetables

  • 12 ounces elbow macaroni
  • 2 cups small broccoli florets

Cheese Sauce

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)

Instructions

  1. Cook Pasta and Broccoli: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to the package directions. In the last 2 minutes of cooking, add the broccoli florets to the pot. Once done, drain pasta and broccoli and set aside.
  2. Make the Roux: In the same pot, melt the unsalted butter over medium heat. Whisk in the all-purpose flour and cook for 1 minute until the mixture becomes bubbly and slightly golden, ensuring the raw flour taste cooks out.
  3. Prepare Cheese Sauce: Gradually whisk in the whole milk and heavy cream, stirring constantly to prevent lumps. Continue cooking and stirring until the sauce thickens, about 3 to 4 minutes.
  4. Add Cheese and Seasonings: Reduce heat to low, then stir in the shredded sharp cheddar and mozzarella cheeses until melted and the sauce is smooth. Add garlic powder, salt, black pepper, and optional paprika, mixing well for balanced flavor.
  5. Combine and Serve: Return the cooked macaroni and broccoli to the pot with the cheese sauce. Stir gently to coat evenly. Serve the creamy broccoli mac and cheese warm for a comforting meal.

Notes

  • For extra flavor, stir in a spoonful of Dijon mustard into the cheese sauce before adding pasta.
  • Top with toasted breadcrumbs for a crunchy texture when serving.
  • Substitute whole wheat or gluten-free pasta to accommodate dietary preferences or restrictions.
