Ingredients

For the Soup:

1 tablespoon olive oil
1 pound ground Italian sausage (or ground chicken/turkey)
1 small yellow onion (diced)
3 cloves garlic (minced)
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes (optional)
4 cups low-sodium chicken broth
1 jar (15 ounces) Alfredo sauce
1 can (14.5 ounces) diced tomatoes (undrained)
8 lasagna noodles (broken into pieces)

For Garnish:

1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup heavy cream
Salt and black pepper to taste
Chopped fresh parsley or basil (for garnish)


Instructions

  1. Heat olive oil: In a large pot or Dutch oven over medium heat, add the olive oil.
  2. Cook sausage: Add the sausage and cook until browned, breaking it apart as it cooks.
  3. Add onion and garlic: Stir in the diced onion and cook until softened. Add garlic, basil, oregano, and red pepper flakes, and cook for 1 minute.
  4. Combine ingredients: Pour in the chicken broth, Alfredo sauce, and diced tomatoes. Bring to a simmer.
